Amarena cherries, from the town of La Morra in Piedmont, pack a tart punch. The jam from this fruit is quite a versatile product that would be equally at home on a cheese plate or rolled into a pastry. I chose the later application this time around. Using the brioche recipe from Tartine I set to work to create a treat for the warehouse gang using Amarena Cherry jam from Ritrovo. This confiture has more of a chutney's texture and maintains its piquant quality. Its meaty constistancy gives the jam enough body so as not to get lost in the swirls of a brioche pastry. The jam rolls were the perfect mid morning snack thanks to the tartly balanced jam and subtly sweet brioche.
